Ha, what a concept. If you are a parent, I’m sure at some point you have had trouble getting your children to eat their vegetables. Here are a few tips and tricks that work for us.
- In true BFF Style… Spiralize it! A spiralizer is good for more than just zucchini! Apples, carrots, and sweet potatoes are a few fun favorites.
- Cut vegetables into fun shapes. Mini cookie cutters are great on zucchini, jicama and even melons.
- Sneak them into marinara and even pizza crust! You can’t forget about our famous cauliflower bread. Just 2 slices are a serving of vegetables. My boys just love building their own pizza at home. When given the option they usually add vegetables as a topping as well.
- Offer up some veggie sticks with a healthy dipping sauce like hummus or a yogurt based ranch. It’s always a bonus if you can sneak in a little clean protein.
- Blend it all up into a soup. Steamed carrots, green beans, roasted butternut squash and sweet potato make one tasty meal. We frequently make this soup at our house, served over quinoa. Just put all your cooked vegetables in the blender with enough broth (vegetable, chicken or beef, it doesn’t matter) to get everything blended nicely so you can’t see any little chunks (especially anything green). Pour into a pot and cook on low for 20. And boom! Picky eater soup. We hope everyone has a safe and fun spring break. Don’t forget to come see us at the cafe, where kids eat free until March 30th.
